I think in lockdown the hardest thing to do is to share your baking. Which means you eat all of the cake yourself. So, here is a recipe for just one. Blueberry Crumble. Hope you enjoy.

  • 15 Cookies
  • 5 minutes
  • 30 minutes

Ingredients

Blueberry Part

  • 100g (3.5oz) of Blueberries
  • 10g (0.35oz) of brown sugar
  • 1 tsp of cornstarch (optional)
  • Zest of a lemon (optional)

Crumble Part

  • 40g (1.4oz) of flour
  • 30g (1.05oz) of white sugar
  • 30g (1.05oz) of cold butter

Directions

Blueberry Part

  1. Heat the oven to 200°C (390°F).
  2. In a mixing bowl add the blueberries.
  3. Add in the brown sugar. (white sugar is also fine here)
  4. Add in the cornstarch.

Crumble Part

  1. In a separate bowl, add the flour, white sugar and cold butter.
  2. Rub the mixute together till you get a breadcrumb texture. Or, pop it into the food processor to mix it well.
  3. Top the blueberries with the created crumble. Don’t press down on the crumble, you want some air flowing.

Bake

  1. Bake for 20-35 mins at 200°C (390°F).
